Bolognese Sauce is a classic hearty beef ragout from Bologna. Our version stays true to the original, having a gutsy full flavour of beef and tomato, with fragrant Italian herbs.

We've had so many requests so its time..... Beef Lasagne... alternating layers of beef bolognese, napoli sauce between pasta finished with béchamel and parmesan cheese. Two generous adult serves.

Our Mac & Cheese is made from a combination of cheddar, gruyere, mozzarella, parmesan and Colby cheeses and topped with a crumb crust. Delicious French Style "heart attack" mash is the buttery, creamy mash potatoes you usually only find in French Restaurants the perfect accompaniment to so many CoTC dishes, our mash is two generous serves. 400g serves 2 adults

Also known as Dauphinoise Potatoes, this French classic is adapted from a Julia Child’s recipe. With layers upon layers of finely sliced potatoes baked in, cream, butter and cheese with a hint of fresh thyme, it’s luxurious and thoroughly indulgent. 2 adult serves

This is my freezer-friendly interpretation of what I believe to be the greatest lemon tart in the world — Heston Blumenthal’s. While Heston’s silky custard-based tart doesn’t survive the freezer, mine takes a different path: a curd-based filling enriched with cream and set with gelatin, nestled in crisp sable pastry. It may not be exactly the same, but it delivers that same bright, zesty pop of lemon in every mouthful — and it’ll freeze beautifully. Just defrost overnight in the fridge, slice, and enjoy.
