Tandoori Chicken

Half a bird, CotC style. Each chicken is split down the backbone, bones trimmed for easy eating (leg and wing left in for flavour), then marinated in a rich blend of cumin, coriander, paprika, garam masala, and a gentle hit of chilli — all mixed through coconut yoghurt (yes, yoghurt… but dairy-free, so my family can eat it too). Roasted until golden, tender, and packed with proper tandoori flavour — you’ll get one breast and one thigh per serve. This one's bold, aromatic, and perfect with rice, salad, flatbread or a bit of mango chutney on the side. Enough for two with extras, or one very generous serve.
