Thai Coconut Barramundi Curry

I love barramundi in curry and eat it all the time. My girl's like it because it's robust enough to hold sauces and it goes with sticky rice and salad and as a bonus is super healthy! That vibrant combination of green curry, fresh ginger, coriander and coconut milk is completely intoxicating. We also add a little squeeze of fresh lemon juice for a hint of acid which helps to round out the other flavours.
