As the weather starts to chill, this soup is always the first one I make. Slow roasted pumpkin, onion and garlic, served with a dash of sour cream and crusty bread! So warming and comforting!

Ingredients

Butternut pumpkin, Chicken stock, Water, Onion, Garlic, Extra virgin olive oil, Kosher Sea salt, Cracked black pepper, Cream (Milk)

Preparation and storage notes

Remove the lid before heating. If defrosted microwave for 1 min, if frozen microwave for 2 mins. Stir and repeat for 30 seconds at time until heated to your desired temperature. Add a little water to loosen if needed.
