Chinese Sweet Corn and Chicken Soup

This was always my favourite thing to order when we would visit the local Chinese restaurant growing up - warming, but still fresh from the sweet corn. There was always something about this meal that made it feel more than the sum of its actually quite simple parts. We have added poached chicken breast to make it an even more filling meal!

Ingredients

Homemade Vegetable stock, Creamed corn, Chicken breast, Eggs, Green Onion, Soy sauce (GF), Ginger, Garlic, Cornflour (GF), Salt, Black pepper

Preparation and storage notes

Remove the lid before heating. If defrosted microwave for 1 min, if frozen microwave for 2 mins. Stir and repeat for 30 seconds at time until heated to your desired temperature. Add a little water to loosen if needed.
