We smother the eye fillet with housemade pesto and wrap it in proscuitto and roast it to medium rare. Delicious cold or reheated. Please advise if you want it cooked more rare. We include some of our balsamic and onion relish

Preparation and storage notes

Your beef has been cooked to rare. Pls place in preheated oven at 200 degrees to cook to your liking. Uncover for last 5 mins to crisp proscuitto. We suggest 10-15 minutes for medium & 20-25 minutes for well done.
