Malay Satay Chicken Curry

This Satay curry is a rich and flavorsome dish that contains the smokiness of the grill, roasted nuts, and the bold spices from a Malaysian curry. Tender chicken thigh fillets are marinated overnight in our spice blend then chargrilled and simmered in our coconut and peanut based curry sauce and finished with kaffir lime.

Chicken thigh, Chicken stock, Coconut Cream, Peanuts, Onion, satay chicken marinade [Red Onion, Vegetable oil, Lemon juice, Curry powder, Garlic peeled, Galangal, Lemongrass, Turmeric, ground, Paprika], Peanut butter, Vegetable oil, satay spice blend for sauce [Curry powder, Cumin, ground, Coriander, ground, Turmeric, ground, Paprika], Lemon juice, Garlic, Ginger, Kecap Manis (Wheat, Soy), Lemongrass, Fish sauce, Shrimp paste (Crustacean), Salt, Sugar

Preparation and storage notes

Decanter curry into pot and warm gently on low to medium on stove until hot.

alternatively use a microwave by removing vacuum bag and microwaving for 2 minutes, stir curry and microwave again for 3-4 minutes until hot (times vary based on microwave power)

serve with jasmine rice, roti bread, and some sliced cucumber.
